Barbadillo produces fortified wines from Jerez-Xérès-Sherry in Andalucía, Spain's southernmost wine region. The winery works with Palomino, the region's signature grape, crafting sherries through the solera system—a method of fractional blending that layers wines of different ages. The Criadera Selection Palo Cortado En Rama and Arboledilla Palo Cortado exemplify the house's approach to this oxidative style: dry, complex, and structured. The S.Roberto Bota Única 1/2 Amontillado, also Palomino-based, demonstrates the winery's range within the amontillado category. Palo Cortado occupies a middle ground between amontillado and oloroso—lighter and more delicate than oloroso, yet richer than amontillado. Barbadillo's sherries have been assessed by Decanter, Wine Advocate, Wine Spectator, and Wine Enthusiast.
