Callejuela produces sherries from Jerez in Andalucía, Spain's storied fortified wine region. The winery works with Palomino, the traditional grape of the Jerez appellation, crafting wines through the solera system—a method of fractional blending that marries younger wines with older reserves. Astronáutica Manzanilla Pasada, the winery's flagship, is a bone-dry, aged manzanilla that expresses the mineral salinity and yeast-driven complexity characteristic of the style. Manzanilla de Anada offers a fresher expression of the same grape, while Soleras de Almacenista La Olvidada Macharnudo draws from the winery's aged reserves.
