Canônico & Santoli works the volcanic soils of Irpinia, in Campania's interior highlands. The region's elevation and mineral-rich terrain shape wines of clarity and structure. The winery's Hirpus Irpinia Aglianico draws from the local dark grape, a variety that thrives in these conditions and yields wines with depth and aging potential. Alongside it stands Iside Fiano di Avellino, made from Fiano—the white grape that defines the appellation—and Greco di Tufo Mefite, sourced from another of the region's signature varieties. These wines have been assessed by Wine Advocate and Decanter. Irpinia remains one of southern Italy's most distinctive terroirs, and the winery's focus on indigenous grapes reflects the region's viticultural identity.
