Castellblanc produces sparkling wines in Cava, Spain's renowned region for traditional-method bubbly. The winery works with the classic Cava trio—Xarel-lo, Parellada, and Macabeo—grapes that thrive in the chalky soils of Penedès and deliver the mineral precision and fine bubbles the region is known for. The Cava Semi Seco blends these varieties into a wine with residual sweetness that softens the natural acidity of the grapes. The Brut Zero Reserva, also built from Xarel-lo, Parellada, and Macabeo, takes the opposite approach: bone-dry, with extended aging that deepens complexity.
