Corte Cavedini works within Valpolicella, the Veneto region of northern Italy known for its distinctive dried-grape wines and bright, structured reds. The winery produces two core expressions: a Valpolicella built from Corvinone, Rondinella, Croatina, Oseleta, and Merlot—a wine that balances the region's characteristic earthiness with subtle fruit depth—and an Amarone della Valpolicella, the region's signature appassimento wine, crafted from Croatina, Rondinella, Oseleta, Corvina, and Merlot. The Amarone's concentrated character emerges from the traditional practice of drying grapes before fermentation, yielding a wine of weight and complexity. Both wines have been assessed by Decanter.
