Escudial operates in Dão, the granite-bedded heart of Portugal's Beiras region, where cool nights and mineral-rich soils shape wines of precision and structure. The winery works with Encruzado, the region's signature white variety—a grape of bracing acidity and stone-fruit clarity—and the dark-skinned Alfrocheiro Preto, Touriga Nacional, Tinta Roriz, and Jaen that anchor Dão's red tradition. The Unoaked Encruzado expresses the variety's lean, crystalline character without oak's intervention, while the Unoaked Reserva, a field blend of four regional varieties, demonstrates the textural complexity and balance that emerge from Dão's terroir.
