Fabiano produces wines from Verona, in the heart of Veneto's classical wine country. The winery focuses on the indigenous varieties of the Valpolicella region: Corvina, Corvinone, Rondinella, and Molinara. These grapes form the backbone of two flagship Amarones—the Riserva I Fondatori and the Classico I Fondatori—both structured around the appassimento method, in which grapes are dried before fermentation to concentrate flavor and alcohol. The Valpolicella Classico Superiore Ripasso, a mid-weight expression, blends the same core varieties with Sangiovese. Wine Enthusiast, Wine Spectator, and Decanter have all assessed the portfolio. The Amarone Riserva I Fondatori achieved a prestige average of 91.0, while the Classico iteration scored 89.8. The Ripasso registered 88.3. These ratings reflect the technical demands of appassimento winemaking and the regional typicity these wines express.
