Parató produces wines from Catalunya, the northeastern region of Spain known for its distinctive white varieties and sparkling traditions. The winery works primarily with indigenous grapes: Xarel·lo, Parellada, and Macabeo—varieties that thrive in the Mediterranean climate and limestone soils of the region. Xarel·lo, in particular, anchors the portfolio, appearing in still wines and in the Cava Atica Gran Reserva Extra Brut, a traditional-method sparkling wine that blends all three regional varieties. The winery also produces Xarel·lo de Verema Tardana Dolç Natural, a late-harvest expression that captures the grape's capacity for concentration and natural sweetness.
